Why This Recipe Is Special

I fell in love with rice bowls during a period when I was spending a small fortune at Asian fast-casual restaurants. Every time I ordered a chicken rice bowl, I thought, “I could make this at home.” When I finally did, I realized I could make it better. These sweet chili chicken rice bowls are the result, and they have become my most-requested weeknight dinner.

The star is the crispy chicken thigh. I am a devoted thigh enthusiast — they are more flavorful than breasts, juicier, more forgiving, and cheaper. When you cook them skin-side down until the skin is shatteringly crispy, then glaze them with sticky sweet chili sauce, the combination is electric. But the supporting cast is what makes this bowl sing: tangy quick-pickled vegetables cut through the richness, creamy avocado adds a cool element, and fluffy jasmine rice soaks up every drop of glaze. It all comes together in 35 minutes, making it completely realistic for a Tuesday night.

Perfectly Crispy Chicken Skin

Getting chicken skin truly crispy starts before the chicken hits the pan. Pat those thighs absolutely dry with paper towels — any surface moisture will steam instead of fry, leaving you with limp, rubbery skin.

Heat the oil over medium-high until it shimmers, lay the thighs skin-side down, then reduce to medium. This lets the subcutaneous fat render slowly, essentially frying the skin in its own fat. The golden rule: do not touch the chicken for at least 8 minutes. Every time you move it, you interrupt the rendering and prevent even browning. When the skin lifts cleanly and is deep golden brown, flip.

The second side cooks more quickly — another 8-10 minutes brings the internal temperature to 175°F (80°C). Thighs benefit from this higher temperature because the connective tissue breaks down further, making the meat even more tender.

Crafting the Sweet Chili Glaze

The glaze ties this bowl together, and building it in the same pan is crucial. That pan is full of rendered chicken fat and fond that add incredible savory depth. The base is store-bought sweet chili sauce (Mae Ploy is my go-to), but I never use it straight. Soy sauce adds umami, rice vinegar brightens, honey provides stickiness, and sesame oil adds nutty aroma.

The cornstarch slurry is the finishing touch — it gives the sauce a glossy, lacquered appearance that wraps around each piece of chicken. Mix the cornstarch with cold water first to avoid lumps. The glaze should be thick enough that a spoon trail does not fill back in immediately.

Tips for Perfect Results

Rinse your jasmine rice until the water runs clear. This removes excess starch that causes gummy rice. Three to four rinses yield fluffy, separate grains that soak up the glaze beautifully.

Start the pickled vegetables first. They need at least 20 minutes in the vinegar mixture. For more flavor, add thin jalapeno slices or a clove of smashed garlic to the pickling liquid.

Use a cast-iron skillet. Cast iron retains heat better than anything, meaning consistent browning. If you do not have cast iron, use a heavy stainless steel pan. Avoid nonstick — it does not get hot enough for a proper crisp.

Let the chicken rest before slicing. Five minutes on the cutting board allows the juices to redistribute. After resting, slice on a bias into thick strips for maximum glaze surface area.

Variations to Try

Korean Gochujang Version. Replace the sweet chili sauce with 3 tablespoons gochujang mixed with 2 tablespoons honey and 1 tablespoon soy sauce. Top with kimchi instead of pickled cucumbers and add a fried egg.

Coconut Lime Rice Base. Cook the jasmine rice with one can of coconut milk replacing half the water, plus the zest of one lime. The tropical element pairs beautifully with the sweet chili chicken.

Sheet Pan Version. Roast seasoned chicken thighs skin-side up at 425°F (220°C) for 30-35 minutes, brushing with glaze during the last 5 minutes. Less crispy skin, but much easier cleanup.

Tofu Bowl for Vegetarians. Press extra-firm tofu, cube it, toss with cornstarch, and pan-fry until golden. Toss in the sweet chili glaze. Add edamame for extra protein.

How to Store

Store components separately for the best meal prep results. Chicken, rice, and glaze keep in the refrigerator for up to 4 days; pickled vegetables last a week and actually improve over time. Reheat rice in the microwave with a splash of water and a damp paper towel. Re-crisp chicken in a 375°F (190°C) oven for 8-10 minutes. Slice avocado fresh each day and assemble bowls right before eating for the best texture contrast.

These sweet chili chicken rice bowls are everything I want in a weeknight dinner — fast, flavorful, and endlessly customizable. If you enjoy this, try my honey garlic chicken bites for another sticky-sweet chicken dish, my gai yang for a Thai take on incredible chicken, or my creamy pesto chicken pasta for a completely different flavor profile.

Instructions

1

Quick-Pickle the Vegetables

In a small bowl, whisk together the rice vinegar, sugar, and salt until dissolved. Add the sliced cucumber and julienned carrots. Toss to coat and set aside while you prepare the rest. The veggies will pickle lightly in about 20 minutes.

2

Cook the Rice

Rinse the jasmine rice under cold water until the water runs mostly clear, about 3-4 rinses. Combine with 3 cups (720ml) of water in a medium saucepan. Bring to a boil, then reduce heat to the lowest setting, cover, and cook for 15 minutes. Remove from heat and let steam with the lid on for 5 minutes. Fluff with a fork.

3

Crisp the Chicken Thighs

Pat the chicken thighs very dry. Season both sides with salt, pepper, garlic powder, and onion powder. Heat the oil in a large cast-iron or heavy-bottomed skillet over medium-high heat. Place the chicken thighs skin-side down and cook without moving for 8-10 minutes until the skin is deeply golden and crispy. Flip and cook for another 8-10 minutes until the internal temperature reaches 175°F (80°C). Transfer to a cutting board.

4

Make the Sweet Chili Glaze

Reduce the heat to medium. In the same skillet, pour off all but 1 tablespoon of chicken fat. Add the minced garlic and ginger, cooking for 30 seconds. Pour in the sweet chili sauce, soy sauce, rice vinegar, honey, and sesame oil. Stir to combine and bring to a simmer. Add the cornstarch slurry and cook for 1-2 minutes until the glaze thickens and becomes sticky.

5

Assemble the Bowls

Slice or shred the chicken thighs. Divide the jasmine rice among 4 bowls. Top each with chicken, drained quick-pickled cucumbers and carrots, sliced avocado, and green onions. Drizzle generously with the sweet chili glaze, sprinkle with sesame seeds, and add sriracha if desired.

Frequently Asked Questions

Can I use boneless skinless chicken thighs?

Yes, but you will lose the crispy skin component. Boneless skinless thighs cook faster — about 5-6 minutes per side. They still work beautifully with the sweet chili glaze, just with a different texture.

What can I use instead of sweet chili sauce?

Mix together 3 tablespoons honey, 2 tablespoons rice vinegar, 1 tablespoon sriracha, and 1 tablespoon soy sauce for a homemade version. Adjust the sriracha to your preferred heat level.

Can I use brown rice instead of jasmine?

Absolutely. Brown rice will need about 40-45 minutes to cook and a higher water ratio (2.5 cups water per 2 cups rice). Start the rice first since it takes longer.

Are these bowls good for meal prep?

Yes! Store the chicken, rice, and glaze separately. Keep the pickled veggies in their brine. Assemble fresh each day and add avocado right before eating to prevent browning.
