Ingredients
  

  • 3 ripe bananas mashed
  • 1/2 cup melted butter or coconut oil for dairy-free
  • 3/4 cup brown sugar or coconut sugar
  • 1 large egg or flax egg for vegan
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup all-purpose flour or 1:1 gluten-free blend
  • 1/2 tsp cinnamon optional
  • 3/4 cup chocolate chips mini preferred

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8x8 or 9x9-inch baking pan with parchment paper.
  • In a large bowl, mash the bananas until mostly smooth.
  • Stir in melted butter, brown sugar, egg, and vanilla extract until well combined.
  • Add baking soda, salt, flour, and cinnamon (if using). Mix until just combined.
  • Fold in chocolate chips, reserving a few to sprinkle on top.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 25–30 minutes or until a toothpick inserted comes out with a few moist crumbs.
  • Let cool in the pan before slicing into bars.

Notes

Use very ripe bananas for the best flavor.
Do not overmix the batter to keep bars soft.
Great for freezing—just wrap bars individually and store for up to 2 months.
